Docs - Make the Beta Docs good enough to link from the website instead of Legacy Docs #47

Goal
Make the "Beta" docs the main docs. Rename the current docs to "Legacy".
Elevated priority per Sprint 48 planning. Every new feature adds content to legacy GitBook that will need migration. Catching up now means new content goes directly to Mintlify, avoiding double-maintenance. Team agreed to push forward on this in Sprint 48.
