Update screenshots

The screenshots are from a previous iteration of the UI that used GNOME's Adwaita GTK widgets.

The current UI is bare GTK and looks uglier. 😆 But we should probably update the screenshots so that people know what they're getting.

Adding a demo video might be interesting too.

Hello! I don't think that Playwright can help us here; I think someone just needs to run the program and take some screenshots of the different flows.

(By the way, is this an automated message? It was posted a couple of times.)
