[Epic] Convert iOS keyboard menu app over to using Swift UI

Description

For the long term health of the project, it would be best if uses of UIKit were transitioned to Swift UI. This epic will have multiple sub issues, with the work that is done for this issue being the base transition of the app itself and removing the storyboard for the app.
