copying the default clickhouse settings when not available yet

potential fix for #59

Two options which could be causing #59

• docker creates a directory when no file exists, so the default should be made available
• the default folder where the docker-compose is looking for the file is incorrect.

This pull request assumes the first and fixes it by copying the files over, in case they are missing.
