Feat/local dev docker compose

Docker compose version of dev environment added. Slimmed down images.
This PR also updates most recent vulnerabilities to day on UV packages...

I am having trouble with rust demorunner to run demos. It launches correctly, receives demos and when executing code it returns an error:

I'd merge this PR and open another to fix whatever is going on with rust-demorunner. The rest of the modules and CP are working correctly
